Brown butter date coconut loaf cake


I thought about making brown butter cake with dates ..especially for coffee times, it reminds of home, back in Dubai in the afternoon with small cup of Arabic coffee setting next to my mom & dad,when I traveled to Houston and Brought some dates from our farm that I used it in this cake with American flavor. Brown butter aroma is almost like coffee so I thought of sharing this recipe.


(226g) 1 cup unsalted butter, plus more for the pan
(210g) 1 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon kosher salt
1 teaspoon of cinnamon
(150g) 3/4 cup brown sugar
4 large eggs
1 teaspoon of vanilla extract
(100g) 1 cup ground pecan or meal
(120g) 2/3 cup dates (finely chopped)
(50g) 1/2 cup shredded sweetened coconut


In a medium light-colored skillet, melt the butter over medium-high heat. Cook, swirling the pan occasionally, until the milk solids are golden brown and the butter smells nutty, 4 to 6 minutes. Immediately transfer the butter to a large bowl (this will be for the cake batter)Set the bowl aside.
Preheat the oven to(180c) 350 degrees F. Spray with baking spray a 4 1/2- by 8 1/2-inch loaf pan and cover with parchment paper.
To prepare the cake, toss the dates with three tablespoons of flour.
whisk together the flour, baking powder, cinnamon, ground pecan and salt in a medium bowl and set aside. Add the brown sugar to the 2 sticks of browned butter and beat the mixture with an electric mixer on medium-high speed until all combined together , 3 to 4 minutes. Add the eggs one at a time, beating after each addition. Then add vanilla extract Beat in the flour mixture just until combined, fold in the dates with spatula. Transfer the batter to the prepared pan & sprinkle coconut on top of the batter
Bake until the cake is golden brown and a toothpick inserted in the center comes out with moist crumbs attached, 70 to 80 minutes. Transfer the cake to a rack to cool for 20 minutes, then remove the cake from the pan and let cool completely. Enjoy with cup of coffee.

Note: you can let the butter softened for cakey texture and bake for 60 minutes, for me I like it dense
