Summer season in UAE or in gulf region in general is the date season where can see the local markets are full of different kinds of dates, people can’t enjoy Arabic coffee without bowl of dates in the afternoon, and it,s a shame to serve Arabic coffee without dates after feasts..and people brag about their home grown date quality as well.
i came a cross this recipe when I made an iftar feast last ramdan and I was running out of time to make a dessert, I was inspired by Mary Barry great British bake off when she asked the contestants to make a pudding.
I saw myself as contestant that moment and I came out with this dessert
which was a crowed pleasing, especially when it served hot, topped with cold ice cream.
3/4 + 1 tablespoon / 200g unsalted butter
4 large eggs
1 3/4 cup / 340g sugar
1 cup/ 85g cocoa powder
1/3 cup 50g flour
2 tsp vanilla extract
1 tablespoon Coffee
1/2 cup 100g date or medjool date soaked in water overnight or soft ones ( pitted and chopped)
Vanilla ice cream, for serving
Pistachio and rose petals for serving
Preheat the oven to 160c,Melt the butter and set aside to cool.
Sift the cocoa powder and flour together and set aside.
beat the eggs and sugar with mixer on medium-high speed for 5 to 10 minutes, until very thick and light yellow. After 10 minutes, reduce the speed to add the vanilla, coffee, and the cocoa powder and flour mixture. Mix very slowly until everything is just combined. Slowly pour in the butter and mix again just until combined, add the dates
place the dates Pour the mixture into the buttered baking dish and place it in a larger baking pan. Add warm water to the pan until it comes halfway up the side of the dish Slowly place it into the oven, and bake for 50-55 minutes.
For self saucing version bake for 40-45 minutes
Garnish with pistachio and rose petals serve it hot with vanilla ice cream.
