Figs, feta cheese & hazelnut salad


90g hazelnuts

4 figs

100g baby rockets or arugula

50g goat,s feta cheese (crumbled)



2 tablespoons olive oil

2 tablespoons of pomegranate molasses

1 tablespoon red vinegar

2 teaspoons lemon juice


Preheat the oven to 180c/4 and toast the hazelnuts in a baking tray for 5 minutes then chop them.

Place the arugula in a dish then add the hazelnuts

Toss together then add the dressing then toss again.

Add the feta cheese and the figs on top of it then serve.
