I came a cross this combination when my mom used to cook sweet potato in the morning for my dad.
I take two slices and I add maple syrup with tahini.
, throw some nuts.
Breakfast AKA muffins.
Alexis @breezybiscotti was in da house while testing, we forgot to measure the sweet potato, we decided to carry on with recipe..to bring a new creature to life.
second attempt was a huge success. Alexis approved ( and her boyfriend) and jada.
(325g) 1 cup mashed sweet potatoes
(180g) 1 1/2 cups all-purpose flour
(150g) 3/4 cup firmly packed brown sugar
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
Pinch of clove
1/8 tsp. salt
(180ml) 3/4 cup vegetable oil
(60ml) 1/4 cup maple syrup
(25g) 3 tablespoons of black sesame ( more to sprinkle on top)
(15g) 8 tablespoon of tahini (divided)
Preheat the oven to 350°F. Lightly grease a muffin tin.
• In a large bowl, mix together the sweet potatoes, flour, brown sugar, baking powder, baking soda, cinnamon, clove, black sesame, and salt.
• Mix in the egg , oil, and maple syrup. Spoon into the prepared muffin tins, add a teaspoon to each muffin and use a wooden skewers to swirl around, sprinkle sesame on top of each muffin. bake for 25-30 minutes, or until the muffins spring back when lightly touched.
