Mortadella pasta salad

This recipe when you are short of ingredients and determination to make a proper pasta meal,just boil the pasta ,slice the mortadella and BOOM!!


225 grams of pasta

2 tablespoons of extra virgin olive oil

1/2 teaspoon of salt

1/2 clove of garlic (minced)

2 tablespoons of lemon juice ,zest

1 teaspoon of dried thyme

1/2 Dijon mustard

150 grams of mortadella (cubed)1/4 inch

15 grams or handful of parsley leaves ( chopped)

75 grams grated Parmesan


Bring a pat of water to boil, add salt to taste, then cook the pasta according to packet instructions. Meanwhile, whisk together the oil, lemon juice, zest,dried thyme ,garlic ,salt and mustard to make the dressing. Drain the cooked pasta and tip it into a large bowl, pour over the dressing and toss well to coat. When cool stir in the mortadella pieces, chopped parsley, if using, and Parmesan. Check the seasoning adding salt and pepper as required.
