6 tbsp olive oil
2 lemons zest and juice of 1/2
2 tbsp sumac
5 large garlic cloves peeled and sliced
20g coriander finely chopped
salt and pepper to taste
800g large prawns In a big bowl mix olive oil, lemons, sumac, coriander, garlic, salt and pepper.
Add the prawns and mix well to ensure they are evenly coated,cover the dish to marinate for 30 minutes no longer than 1 hour in refrigerator.
preheat a frying over medium heat, once it’s hot shake off the excess marinade from the prawns and cook the prawns for 2-3 minutes each side until they turn pink.
