Chai honey apricot with labneh& pistachio
I was cleaning the fridge once and I found a big plastic bag of dried apricot and I was wondering what Am I going to do with all this apricots..I was so inspired by john whaite recipe from his cookbook 5 ingredients to poached plums in earl grey tea.. I thought of making my version of that recipe poached apricot in chai with cardamom and rose water served with labneh..sweetened with honey.. totally satisfied with that as a breakfast, no more extra dried fruits.
ingredients :
500g dried apricot6 chai tea bags2 cardamom pods (cracked)1 tablespoon of rose water (optional)1 1/3 cup (300ml) water1/3 cup + 1 tablespoon (100ml) honeylabneh or Greek yogurt for servingChopped pistachio
method :
Put water, honey, rosewater, teabags, cardamom into saucepan, bring to boil.Reduce to simmer and cook for 5 minutes.add the apricot then bring to boil for 1 minutes.Discard the teabags, decantthe apricot with the syrup in a large glass bowl, cover with cling film and leave it over night.To serve, place a desired amount of apricots with the syrup on top of yogurt, add pistachio and enjoy!!Note : you can place the apricot in a clean jar and store in a fridge up for s month.
