Salted date molasses & fennel cookies
im feeling homesick ..missing winter in uae, palm trees & golden sunsets.
bonfire with my best friends in dessert..singing while sipping hot coffee.checking Christmas market in Houston seeking for affection.I really enjoy the smell of the spicycookies at the holiday market, it reminds me of UAE traditional desserts..cuz we use spices in baking.it made me feel homesick..missingpalm trees, GoldenSalted date molasses & fennel cookies was inspired by sugar cane molasses cookies. ( known as molasses cookies) Date molasses is very well known for being aromatic & flavorful.I wanted to add Emirati spirit to this kind of cookies, and fennel cuz we usually add fennel to date desserts in UAE. and of course afternoon Arabic coffee (gahwa)
Ingredients:
(219g)1 3/4 cups all-purpose flour1/4 teaspoon baking powder1/2 teaspoon baking soda1 teaspoon ground fennel.1/2 teaspoon ground ginger1/2 teaspoon ground cloves3/4 teaspoon sea salt(84g) 6 tablespoons butter, softened(200g) 1 cup granulated sugar, divided(55g)1/4 cup brown sugar1 large egg(60ml)1/4 date cup molasses1/2 teaspoon cardamom
Method:
Combine flour, baking soda, baking powder, ginger, fennel, cloves, salt in a bowl..set a sideCream butter, 5 tablespoons granulated sugar, and brown sugar in a large bowl; beat with a mixer at medium speed 5 minutes or until fluffy. Add egg; beat 30 seconds. Add date molasses; beat just until combined. Add flour mixture to butter mixture; beat at low speed or just until combined. Cover and chill 30 minutes.Preheat oven to 350°.Shape dough into 22-24 ( walnut size) I used 1 oz ice cream scoop. Roll balls in remaining 3 tablespoons sugar mixed with 1/2 teaspoon of cardamom ; place apart on baking sheets covered with parchment paper. Bake at 350° for 12 minutes or just until set. Cool 3 minutes on pan; remove to a wire rack.
